TRADITIONAL 18 YEAR BARREL AGED ITALIAN BALSAMIC

Our Traditional 18 Year Barrel Aged Italian Balsamic from Modena, Italy is produced in the traditional style.  If your bottle has a red label which reads “Traditional” then this is the one!  Aged using the Solera system for up to 18 years in chestnut, oak, mulberry and ash barrels with a 4% acidity, our Traditional 18 Year Barrel Aged Italian Balsamic is sweet and thicker as compared to our 12 year (A-Premium) balsamic vinegars. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.

RECIPES USING TRADITIONAL 18 YEAR BARREL AGED ITALIAN BALSAMIC

Our Traditional 18 Year Barrel Aged Italian Balsamic can be used in any recipe calling for a balsamic vinegar. Balsamic Chicken With Green Beans

Balsamic chicken with green beans is one of our favorite quick and easy recipes. The most important trick to this recipe is to ensure you are using the highest quality (not most expensive) olive oil and balsamic vinegar, available at EVOO Marketplace. Just like all balsamics and olive oils are NOT created equal neither is chicken quality. We have found locally the highest quality chicken to be Red Bird. This recipe is extremely quick and easy to prepare. Enjoy!!

Ingredients

  • 1.5lb Chicken Breast or Tenderloin
  • 4 tablespoons 18 Year Aged Balsamic (EVOO Marketplace)
  • 1 tablespoon Denissimo Balsamic (EVOO Marketplace)
  • 1 tablespoon Honey (J & J Honey EVOO Marketplace)
  • 3 tablespoons Garlic Infused Olive Oil (EVOO Marketplace)
  • 1lb Fresh Green Beans (May substitute with broccoli, asparagus, slivered carrots)
  • 1 cup Grape Tomatoes (Halved)
  • 1/2 cup Parmigiano Cheese (Grated)
  • Sea Salt (To Taste)
  • Black Pepper (To Taste)
  • Red Pepper (Crushed) (To Taste)
  • 1lb Mushrooms (Sliced)

Directions

Step 1
In a large skillet add 2 Tbs Garlic infused olive oil and heat over medium to medium-high heat. Season Chicken with salt and pepper and saute 8-10 minutes until golden brown.
Step 2
Add 1 Tbs Garlic infused olive oil to a medium skillet and heat over medium to medium-high heat. Add mushrooms and saute 3-5 minutes. Add Green Beans and saute an additional 2 minutes.
Step 3
Combine 18 Year Balsamic, Honey, and Red Pepper Flakes. Add to sauce pan and heat 1-2 minutes over medium to medium-high heat. The goal is to slightly thicken the mixture.
Step 4
Add sauted Chicken, Mushrooms, Green Beans, and halved tomatoes to sauce and toss over medium high heat 1-2 minutes.
Step 5
Drizzle with ~1 Tbs Denissimo Balsamic and serve. Serve over steamed brown rice if desired.

Ingredients

  • 1/4 cup Aged Italian Balsamic (EVOO Marketplace)

Directions

Step 1
In a medium sauce pan add balsamic and heat over medium to medium-high heat with continuous stirring. Note: the goal here is to reduce the balsamic to a consistency just thinner than desired thickness. A 1/4 cup in a medium sauce pan will reduce within 3-5 minutes. It is normal for the balsamic to foam and bubble as it reduces.
Step 2
Immediately pour hot balsamic into a glass bowl and place over another larger bowl containing ice. Stir continuously until balsamic cools, 3-5 minutes. As the balsamic cools you will notice it thicken significantly.

Note

When performing a balsamic reduction you really want to start with the “good stuff” such as what we offer at EVOO Marketplace.  The majority of “Balsamic Vinegars” sold in the grocery store and other imposter shops are nothing more than red wine vinegar, sodium, corn syrup and/or molasses.  If you attempt to reduce these the awful aftertaste will only be amplified.

A true balsamic reduction as described in this method is perfect as a glaze for various meats, seafood, vegetables, fruits, or drizzled over your favorite ice cream.
