Our Aceto Balsamico di Modena Dark is inspired by the centuries-old tradition of barriques resting in Italian attics—smooth, full-bodied, and crafted in Modena from the must of seven grape varieties: Lambrusco, Ancellotta, Albana, Fortana, Montuni, Sangiovese, and Trebbiano.

Carefully cooked, caramelized, and aged in wooden barrels using the traditional Solera Method, this balsamic offers a brighter, more vibrant profile than our thicker finishing balsamics. At 6% acidity, it brings lively balance and classic Modena character to vinaigrettes, marinades, reductions, and everyday cooking. ✨

2 parts olive oil + 1 part Modena Dark is the classic starting point. For extra body, whisk in Dijon. For a softer finish, add a touch of honey or a pinch of sugar.

Combine equal parts Modena Dark and olive oil—just enough to coat your protein or vegetables. Add garlic, herbs, salt, and pepper as desired, then marinate up to 6 hours.

Seafood note: For fish and seafood, marinate with olive oil only for about 30 minutes, then finish after cooking with a fresh balsamic drizzle or quick vinaigrette.

🔥 Balsamic Reduction Method
For a thicker glaze or sauce, simmer 2× the amount needed over medium to medium-high heat, stirring constantly. Remove it just before your target thickness because it will continue to thicken as it cools.
Rule of thumb: 1/4 cup reduces in about 3–5 minutes and is perfect for vegetables, meats, fruit, or dessert drizzles.
