SIMPLE BALSAMIC BBQ SAUCE

Ingredients

  • 1 cup Barrel Aged Raspberry Balsamic Vinegar (EVOO Marketplace (any of our authentic balsamics will work))
  • 3/4 cups Ketchup
  • 1/3 cup Brown Sugar
  • 1 clove Garlic
  • 1 tablespoon Worchestershire Sauce
  • 1-2 tablespoon Dijon Mustard
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 2 teaspoons Cayenne Pepper (Optional)

Directions

Step 1
Combine all ingredients into a sauce pan and reduce approximately 1/3 over medium heat (~15 minutes)

Ingredients

  • 1 cup Pineapple Barrel Aged White Balsamic (EVOO Marketplace)
  • 10lb Spiral Ham
  • 1lb Fresh Pineapple (Cored & Cubed)

Directions

Step 1
Place 1 cup Pineapple balsamic in a medium sized saute pan.
Step 2
Reduce over medium to medium-high heat for approximately 7-10 minutes with constant stirring. Note: balsamic will bubble and foam as it reduces. We recommend using overhead fan ventilation as the vinegar fumes can be strong. The goal of this step is to reduce the balsamic ~80% of the desired consistency. The remaining reduction will be done in the next step.
Step 3
Pour hot reduction sauce into a glass bowl and set on top of a larger bowl containing ice. Stir until balsamic cools. As balsamic cools it will reduce to a slightly thick syrup. This is a traditional balsamic glaze perfect for anything, even on top of ice-cream!
Step 4
Bake ham according to preparation instructions.
Step 5
During the last 20-30 minutes pull ham out of oven and glaze with Pineapple balsamic reduction. Place pineapple chunks around ham and return to oven for the remainder of baking time.

Note

Any left over Pineapple balsamic reduction can be served over ice-cream

  • 4-6 Sweet Corn (Remove silk and leave corn in husk)
  • 2 tablespoons Chipotle Olive Oil (EVOO Marketplace)
  • 2 tablespoons Organic Garlic Olive Oil (EVOO Marketplace)
  • dash Sea Salt

Directions

Step 1
Place sweet corn with silk removed in a container of water and let sit for 30 minutes to 1 hour. This step will prevent the husks from burning on the grill and will allow the corn to steam when cooking.
Step 2
Grill sweet corn over high heat 10-15 minutes turning frequently. It is normal for the husks to char up.
Step 3
Whisk together Chipotle and Organic Garlic Olive Oils. Remove husks from grilled sweet corn and brush with olive oil mixture. Season with sea salt if desired.

Step 1

Ingredients

  • 1/4 cup Dark Chocolate Balsamic (EVOO Marketplace)
  • 1/4 cup Chipotle Infused Olive Oil (EVOO Marketplace)
  • 1/4 cup Water
  • 1 cup Ketchup
  • 1 tablespoon Worcestershire
  • 3 tablespoons Dijon Mustard
  • 1 teaspoon Hot Sauce or Chili Sauce
  • 1 Medium Sweet Onion (Peeled and quartered)
  • 1 Small Garlic clove (Minced)
  • 2 teaspoons Chili powder
  • 1/2 teaspoon Cayenne powder (Add more if desired)

Directions

Step 1
Process the onion with the water in a food processor until pureed and the mixture resembles slush, about 30 seconds. Strain the mixture through a fine-mesh strainer into a liquid measuring cup, pressing on the solids with a rubber spatula to obtain 1/2 cup liquid onion. Discard the solids
Step 2
In a medium bowl whisk together the onion juice, ketchup, balsamic, Worcestershire, mustard, hot pepper sauce, and black pepper.
Step 3
Heat the Chipotle Infused Olive Oil in a large saucepan over medium heat until shimmering but not smoking. Add the garlic, chili powder, and cayenne and cook until fragrant, about 30 seconds. Whisk in the ketchup mixture and bring to a boil; reduce the heat to medium-low and simmer gently, uncovered, until the flavors meld and the sauce is thickened, about 25 minutes. Cool the sauce to room temperature before using. (The sauce can be refrigerated in an airtight container for up to 1 week.

Ingredients

  • 1.5 cups Port Wine
  • 1/2 cup 18 Year Aged Balsamic (EVOO Marketplace)
  • 1/2 cup Dried Tart Cherries
  • 1 Large Shallot (Minced)
  • 2 sprigs Fresh Thyme
  • 1 tablespoon Unsalted Butter
  • dash Sea Salt

Directions

Step 1
Combine all ingredients (except butter) into medium saucepan; simmer over medium-low heat until
liquid has reduced to about 1/3 cup, (~30 minutes). Cover and set aside.
Step 2
After sauce has reduce remove from heat and whisk in butter until melted. With a slotted spoon remove thyme. Season with Sea Salt if desired.

Ingredients

  • 1/2 cup Pomegranate Balsamic (EVOO Marketplace)
  • 1 tablespoon Whole Grain Mustard (EVOO Marketplace)

Optional

  • pinch Cayenne Pepper

Directions

Step 1
Add Pomegranate Dark Balsamic into a shallow saucepan. Over medium-high heat with continuous stirring reduce balsamic to just before the desired consistency. A 1/2 cup will reduce to approximately 50% in about 5-7 minutes. It is normal for balsamic to bubble and foam as it reduces.
Step 2
Pour reduced balsamic into a glass bowl and place on top of a larger bowl containing ice. Stir continuously until cooled. As balsamic cools it will thicken to desired consistency.
Step 3
Add whole grain mustard and pinch of cayenne. Stir to mix.

Note

This reduction is perfect for glazing poultry, pork, wild game, fish, or roasted vegetables.

Ingredients

  • 1/4 cup Aged Italian Balsamic (EVOO Marketplace)

Directions

Step 1
In a medium sauce pan add balsamic and heat over medium to medium-high heat with continuous stirring. Note: the goal here is to reduce the balsamic to a consistency just thinner than desired thickness. A 1/4 cup in a medium sauce pan will reduce within 3-5 minutes. It is normal for the balsamic to foam and bubble as it reduces.
Step 2
Immediately pour hot balsamic into a glass bowl and place over another larger bowl containing ice. Stir continuously until balsamic cools, 3-5 minutes. As the balsamic cools you will notice it thicken significantly.

Note

When performing a balsamic reduction you really want to start with the "good stuff" such as what we offer at EVOO Marketplace.  The majority of "Balsamic Vinegars" sold in the grocery store and other imposter shops are nothing more than red wine vinegar, sodium, corn syrup and/or molasses.  If you attempt to reduce these the awful aftertaste will only be amplified.

A true balsamic reduction as described in this method is perfect as a glaze for various meats, seafood, vegetables, fruits, or drizzled over your favorite ice cream.
